Week Thirty-Three: Breakfast Rice

This is a really simple and tasty alternative to hot cereal for breakfast:



Breakfast Rice
-1 cup uncooked white rice
-2 1/2 cups boiling water
-1 1/2 cups shredded raw carrots (about 3 medium-sized carrots)
-1/2 cup raisins
-1/3 cup chopped pecans
-1 teaspoon cinnamon
-1/4 cup brown sugar, or to taste
-milk (optional)



Preheat the oven to 350 F.

Rinse the rice in a fine mesh strainer. Place the rice, boiling water, carrots and raisins in an oven-safe dish, stir and cover. Bake in the preheated oven for 30 minutes.


Stir in the pecans, cinnamon and brown sugar; mix well. Serve hot, topped with milk, if desired.
